Fill glass with ice. Add all ingredients. Top with soda water. Garnish with a lemon zest and sprig of rosemary.

Ramsbury Estate honey syrup

Add equal parts of honey (250g) and water (250ml) in a small saucepan and heat until the honey is completely dissolved. Cool and store in an airtight container and keep refrigerated.
