Citrus Herbal Collins

Shake all the ingredients except the soda. Double strain over ice cubes into a Highball glass. Top up with club soda and garnish with lemongrass and a lime wheel.

Ingredients

50ml Ramsbury Single Estate Gin
25ml fresh lime juice
25ml citrus cordial
Top with club soda

Citrus Cordial

2 sticks of lemongrass, 5 leaves of kaffir lime, 20 coriander seeds, Peel from 2 bergamot oranges, Peel from 2 lime fruits, 500ml still water, 500ml granulated white sugar.

Mix half a litre of water and half litre of white granulated sugar in a vacuum plastic bag. Add the lemongrass, kaffir lime leaves, crushed coriander seeds and the peel from bergamot oranges and lime. Seal the bag and let it soak in a water bath at 64°C for 12 hours. Strain and bottle.
